Creamy Mushroom and Spinach Pasta

Ingredients:

  • 12 oz pasta (like fettuccine or penne)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 12 oz mushrooms, sliced (use a mix of cremini, shiitake, or button mushrooms for depth)
  • 1/2 cup white wine (optional, for deglazing)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 tsp dried thyme or 1 tsp fresh thyme leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.

Step 2: Sauté the Aromatics

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook for 2-3 minutes until softened. Stir in the garlic and cook for an additional minute until fragrant.

Step 3: Cook the Mushrooms

  1. Add the sliced mushrooms to the skillet. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
  2. Season with salt, pepper, and thyme.

Step 4: Deglaze and Make the Sauce

  1. If using, pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.
  2. Lower the heat and stir in the heavy cream. Simmer gently for 2-3 minutes until the sauce thickens slightly.

Step 5: Add Spinach and Cheese

  1. Add the fresh spinach to the skillet and stir until wilted.
  2. Stir in the Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper.

Step 6: Combine with Pasta

  1. Add the cooked pasta to the skillet, tossing to coat it in the sauce. If needed, use the reserved pasta water to loosen the sauce to your desired consistency.

Step 7: Serve

  1. Serve the pasta warm, garnished with fresh parsley and additional Parmesan cheese if desired.

Tips for Success:

  • For extra richness, add a tablespoon of butter to the sauce before serving.
  • Toss in cooked chicken or shrimp for a protein boost.
  • Pair with a crusty baguette or side salad for a complete meal.
