Creamy Mushroom and Spinach Pasta
Ingredients:
- 12 oz pasta (like fettuccine or penne)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 12 oz mushrooms, sliced (use a mix of cremini, shiitake, or button mushrooms for depth)
- 1/2 cup white wine (optional, for deglazing)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/2 tsp dried thyme or 1 tsp fresh thyme leaves
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water before draining, then set the pasta aside.
Step 2: Sauté the Aromatics
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook for 2-3 minutes until softened. Stir in the garlic and cook for an additional minute until fragrant.
Step 3: Cook the Mushrooms
- Add the sliced mushrooms to the skillet. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
- Season with salt, pepper, and thyme.
Step 4: Deglaze and Make the Sauce
- If using, pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes until slightly reduced.
- Lower the heat and stir in the heavy cream. Simmer gently for 2-3 minutes until the sauce thickens slightly.
Step 5: Add Spinach and Cheese
- Add the fresh spinach to the skillet and stir until wilted.
- Stir in the Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper.
Step 6: Combine with Pasta
- Add the cooked pasta to the skillet, tossing to coat it in the sauce. If needed, use the reserved pasta water to loosen the sauce to your desired consistency.
Step 7: Serve
- Serve the pasta warm, garnished with fresh parsley and additional Parmesan cheese if desired.
